Classes
The first class is an Introduction, describing the different dimensions of food and drink and introducing the prototype of an ideal diet.
In subsequent classes, we will consider the scientific methods, evidence for the specific benefits and harms associated with macronutrients (fats, proteins, carbohydrates) and food groups (e.g., grains, vegetables, fruits, nuts, meats, fish, poultry, dairy, alcohol). We will analyze and review the evidence supporting specific diets (e.g., Mediterranean, vegetarian) as they relate to healthy individuals as well as those with specific conditions and diseases (e.g., metabolic syndrome, obesity, diabetes, heart disease).
You will be guided on the use of a nutritional calculator that allows you to determine the total amount of nutrients in each day's worth of food and drink. With it, you can see how your proportions of nutrients match up with guidelines and where you might want to make changes.
